Why?
Traditionally the color of coffee has been used to determine the degree of roasts and to enhance consistency in the end product. Nowadays, roast temperatures are recorded to allow the reproduction of previous roasts. However, roast profiles vary widely across different conditions and roaster designs. Thus, to compare roast levels in an unbiased way, Tonino maps the color of ground coffee to a numeric scale independent of the production process.

- lift Tonino and put it on top of the coffee sample
- read the roast degree from the display
By tamping instead of just leveling the coffee the results are less influenced by the grind.

Note that the Agtron values listed above are the result of a cubic approximation (R2 = 0.999) of 13 samples at (PSD 300-500 µm and 800-1200 µm), each with 2 x 4 replicates resulting in a total >1000 readings taken with 4 Toninos and a reference device reporting readings on the Agtron Gourmet scale.
