Tonino

Color is a suitable indicator of the degree of roast for a given raw material

S. Schenker, PhD, ETH Zürich, 2000

Roast degree accounts for more than 80% of the total variation in the sensory properties of coffee

M. Münchow et al., FLAVOR DEVELOPMENT, 2020

Why?

Traditionally the color of coffee has been used to determine the degree of roasts and to enhance consistency in the end product. Nowadays, roast temperatures are recorded to allow the reproduction of previous roasts. However, roast profiles vary widely across different conditions and roaster designs. Thus, to compare roast levels in an unbiased way, Tonino maps the color of ground coffee to a numeric scale independent of the production process.

Tonino color meter

Basic Operation

Sample Preparation
  1. put fine ground coffee into an espresso basket
  2. tamp hard
Scanning
  1. lift Tonino and put it on top of the coffee sample
  2. read the roast degree from the display

By tamping instead of just leveling the coffee the results are less influenced by the grind.
